Healthy New Year’s Treat

Hello, tender friends!

It’s possible to have kid-friendly and fun holiday treats that are healthy!

If you’ve followed my blog for any length of time, you know that I try hard to make holiday treats special that don’t compromise our health values. I try to use only the ingredients that God created.

I consequently wanted to make Cubby a healthy New Year’s treat. So this is what I did:

This could technically be keto, but when I’m making it for Cubby, I add honey so that it’s not actually keto.

Here’s the thing: I started with the scrambled egg chocolate pudding that has been trending on social media as my pudding base. However, I’m not reposting it here because I made so many adaptations that I feel like it would be confusing to do so. At this point, I’m confident in asserting that this recipe is original to me.

The adaptations to this recipe are based on Jacob singing, “At the North Pole/where the candy canes grow,” to the tune of “Down By the Bay” in the weeks leading up to Christmas. After hearing him sing and sing, I knew I needed to come up with some candy cane themed treat for New Year’s.

Ingredients:

12 eggs

Coconut oil or salted butter

1 cup cacao powder

1 can full-fat coconut milk

Approximately 4 oz of raw milk

Stevia to taste

Honey to taste

This is what I did:

  1. Scramble 12 eggs in coconut oil. (You can do it with just six eggs, of course, but I found that the pudding gets eaten so quickly that it’s worth it to just do it with 12.) If you don’t like coconut oil, you can use regular butter, but I like using the coconut oil both for flavor and for extra MCTs (medium chain triglycerides.) Set the eggs aside in a bowl to cool.

2. In a blender, blend one cup of high-quality cacao powder with one can of full fat coconut milk. (You can use the milk of your choice, but I like coconut milk. Later in the recipe I’ll adjust the thickness with raw cow milk.)

You want to ensure that this is blended very well, so let it go for around 60 seconds.

3. Pour half of the cacao coconut milk blend into a cup and set aside. Mix half of the scrambled eggs into the remaining half that’s in the blender. Add REAL stevia and/or honey for sweetness. Real green stevia can vary in flavor and sweetness, so this part is really individualized. I top off with honey or I just use stevia if I want to keep it keto. But if I’m making it for Jacob, I add extra honey and don’t worry about the glycemic index.

4. Blend the cacao powder and coconut milk and scrambled eggs and honey. Add in your preferred milk to adjust the thickness. (Like I said, I use raw cow milk, but it’s really up to you).

5. Scoop out the blended cacao powder, coconut milk, scrambled eggs and honey into a bowl.

6. Repeat steps 3 through 5 with the other half of the cacao and coconut milk blend and honey. Then set aside with the rest of the pudding that’s already blended.

7. Optional : Because I was going for a candy cane theme due to Jacob’s song, I added a few drops of peppermint extract. This will make it taste like a peppermint patty. (As an FYI , I also fed this dish to my brother, who eats way more sweets than we do and has a different palate as a result, and he loved it But if you don’t want the peppermint, you can simply leave it out.)

7. Put the bowl of pudding in the fridge for a minimum of 2 hours. If the pudding blend tastes bitter from the cacao powder, the bitterness might be remedied by cooling the pudding in the fridge. If you think it’s still too bitter for your taste, you can simply stir in more honey.

8. In a bowl with a mixer, mix another can of coconut cream until it fluffs. You could probably use a hand mixer for this, but it’s easier to just set an electric mixer up and let it go for about 5 minutes.

9. Blend two cups of raspberries in a blender. You can use either fresh or frozen. I used frozen after I let them defrost on the counter for about a half hour.

Now this is where it gets magical!

10. Alternately layer the pudding and the coconut cream in a clear glass. (That glass is one that Jacob choose for a Christmas present because “it was the most festive glass in the store.” Yes, those were his words. How cute is that?)

11. On the top of the pudding, swirl the coconut cream with the blended raspberries to make it look like a candy cane. I found the best way to swirl them was using the prong of a fork.

That’s it! A perfect way for Jacob to feel like he got a special holiday treat while also filling him up with high-quality fats and protein.

When I gave it to him, he said, “I need coconut chips on top to be the snow!”

So I put coconut chips on top and he chose to sit in the corner instead of at the table because “that was where it was snowing.” I know he looks kind of tired in this picture, but he truly had a blast.

Of course, if you want this to be truly keto, you need to stick to using just stevia for sweetener with just a tiny bit of honey and only use coconut milk.
