Carrot Coriander Soup

Hello, tender friends!

We’ve been busy cooking and cooking. I’ve missed walking outside to gather most of my ingredients and I’m enjoying this season despite the heat.

(That necklace was one of my recent crafting adventures.)

Today, let’s talk about carrot coriander soup. It’s very similar to a recipe that I got from a GAPS cookbook, but with the substitution of coriander in place of butter. Coriander isn’t particularly expensive, but something about putting it in carrot soup makes me feel fancy.

It started when Anthony cleared some carrots out of one of our raised beds.

Then I thought I should use some of our coriander up since we have so much of it drying out right now.

So I cleaned the carrots attain them in a stock pot with two onions and four sticks of celery. (If you learn nothing else from this blog, please remember that a mirepoix mix of carrots onions and celery is always a soup base winner!)

I sauteed this mix for about 10 minutes, threw some coriander in the pot, added enough homemade bone broth to cover the carrots, and then cooked on medium heat for about a half hour.

Then I pulled out my trusty immersion blender and when blended this nutritional powerhouse into perfection.

I’m not using the word powerhouse lightly; coriander is known for everything from having anti-cancer properties to regulating sleep cycles. God’s pharmacy is the best there is! (Of course, I had hoped that it would help Cub sleep more, but that hasn’t happened…still holding out hope though).

Also, Anthony and I didn’t know this fun little fact until we started growing cilantro: we call the fresh plant cilantro in the United States but the dried seeds coriander. Neither of us realized that these are actually the same plant until this season when growing it ourselves. 🤫🙊🙉

      Thank you, Theresa! I have a Michaels habit…🤫🙊🙉 That’s where the beads are from.

      So apparently they call cilantro “coriander” and coriander “coriander seed” in other countries. That honestly seems more sensible to me!

      Thank you, katie! I would have used chicken broth, but I didn’t have any so I used venison broth.
