Hello, tender friends!

Our cilantro has bolted, so I’m using up as much as I can for the next few weeks. Cilantro is a powerful heavy metal detoxifier and therefore a yummy way to heal. (Detox should be part of any healing protocol.)
This cilantro lime oil is so easy for a week night dinner. Plus this meal is Paleo! This is all I did:
Ingredients:
cilantro (I used a lot because it was from our yard)
chicken legs
lime
olive oil
salt
pepper
lemon flakes
Fresh garlic
- Harvest the cilantro, flowers included. The entire cilantro plant is edible, but the tough stems are not worth trying to chew through. So I discarded those but just left ones that were still pliable alone.

2) Peel the garlic. I used half a bulb but could have used more. Throw the garlic and cilantro in the chopper.

3) After inhaling this olfactory delight, juice a lime. (I would have used two or three but only had one.) Citrus is a natural mood elevator, so take a moment to breathe deeply here. 😊

4) Combine with the cilantro and garlic. Add olive oil to cover the blend.

5) Add lemon pepper flakes (or use the zest of the lime if it’s organic, but mine wasn’t organic.)
6) About a half hour before baking time, salt and pepper the chicken legs and set aside at room temperature on a plate.
7) Cover the chicken legs with the cilantro garlic lime oil and bake at 350°for 40 minutes.
I then drained the chicken juices and sauteed our first squash of the season in the juices. Absolutely delicious!

Enjoy! And save the chicken leg bones for some bone broth to continue to waste not, want not!
I know I’ve been underutilizing my cilantro, especially as a coating for chicken. I’m so glad this abundance of cilantro has snapped me out of my stupor.
