Hello tender friends!
I have officially eaten bread foraged with TWO ingredients from my own yard, and I’m so excited to share this with you!

We started out by foraging dandelions. My little Cub suggested foraging something else. I checked my foraging book, saw that it is indeed edible, and we added that into the mix! Can you guess what the mystery ingredient is?

This was so tasty that Cub and Anthony ate the entire loaf in about 20 minutes. Here’s what I did to make it:
- Preheat the oven to 400°.
- Cut the green part off the base of the dandelion flower. Because I was making this specifically to be a sweet bread, I took care to make sure no bitterness from the green stem could make its way into the mix.
- Mix the cut dandelions, one cup of spelt flour, one cup of corn meal, salt to taste (I just shook the salt shaker over the bowl for about 3 seconds because I’m easy breezy with salting things), one packet of Rapid Rise yeast, and 2 teaspoons of aluminum free baking powder in a bowl.

3) In a separate bowl whisk two eggs, one cup of milk, 3 tablespoons of coconut oil (you’ll have to melt it on the stove first), and 1/4 cup of honey.
4) Mix the wet and dry ingredients together to incorporate them, but don’t mix them beyond that.

5) The mix does not form a firm dough. Place it on parchment paper with some support underneath (I used a pizza pan). Pat spelt flour around the edges if desired
6) I learned this trick years ago, so I can’t take credit for it, but the secret to a crusty bread is baking it with an oven safe pan full of filtered water underneath.

I know that’s counterintuitive, and the first time I did it I thought for sure that my bread would be soggy, but it makes the exterior delightfully crispy.
7) Bake for 20 minutes at 400° and then bump the heat down to 350 for another 15 minutes.

8) Garnish with the secret ingredient and a little bit of butter and raw honey if desired. Then pretend you’re having a tea party with fairies!

Cubby was so proud when I thanked him for asking me to forage the secret ingredient because I hadn’t thought of it myself. When Anthony came in the door, Cubby ran to tell him about his contribution, beaming ear to ear. I swooned thinking about how Cubby and I both learned how to forage a new thing on the same day. He knows so much more than either Anthony or I did at his age.
If you try this, I hope you have as much fun as we did turning this into our homeschooling lesson for the day! Jesus is the only real bread of life, but I like to think he would approve of this loaf, and of how Cubby and I scrambled around his good earth to forage his good gifts for us.
