I’ve been so excited to finally use this book I got for Christmas.

Harvesting dandelions was an amazing first foraging experience for Cub also because he’s big enough to gather the cheerful blooms himself and dip them in batter (although he actually threw them in the batter rather than dip, but it’s ok). It was so special to have him contribute to the meal in this way.
But what surprised me the most was how delicious they came out! I went into the foraging dandelion experience for the nutrition and the benefits to the planet, but I was gobsmacked when I realized how good they tasted.
Here’s the recipe I created, with notes about adaptations.
- Forage approximately one cup of dandelion flowers from your yard. Set in a bowl (I didn’t have a clean bowl, which is why you see the pan, but leave them in the bowl).

2) Whisk one half cup of cornmeal, one half cup of spelt, one cup of milk, 2 tablespoons of dried rosemary, one egg and 1/4 teaspoon of baking powder with salt, pepper and garlic to taste. (Substitute your flour of choice here. I didn’t have any almond flour on hand, but I ended up loving the corn meal and spelt in this and seem to be able to tolerate spelt now). I didn’t have fresh herbs because it’s too early to get them from the garden, but I would have used them if I had had them.

3) Heat up a pan with your oil of choice. I used coconut oil and loved it, but you can use whatever frying oil you prefer.
4) Dip (or throw) the dandelions in the batter, then fry for one minute on each side. I recommend using a spatula to flip them and remove from the pan.

5) Remove from pan and enjoy! Seriously, they were so good!

Dandelions are full of antioxidants, minerals, have anti-cancer properties, etc. They’re so prolific because, like any weed, they’re extremely adept at stealing nutrients from the soil. But when you eat them rather than treat them as the enemy, you get the benefits of all that advanced nutrient takeup for yourself.
I’m so excited about this that I have a four part series planned for dandelion tea, greens, bread and spiritual musings related to this. Maybe this is ridiculous, but I feel like it could really be a game changer if everyone used dandelions as a snack even once a year. It would take pressure off the food supply and help people fight disease while saving money on food.
Yet another free way that God has shown me that people can heal! (And the spiritual post related to this will take us back to Genesis and Daniel).
