Sweet potato “pie!”
When Anthony spotted a 5 lb sweet potato in our neighbor’s garden, we finally decided to try sweet potato pie. While the smaller ones are better for roasting, the mammoth sized sweet potatoes are better suited to pie.
(A brief aside about baking sweet potatoes: I know that baking them in olive oil is popular, but I personally believe you can’t beat coconut oil! These are so easy to make a tray of and leave on the counter for kids to grab in lieu of a granola bar that I don’t understand why more people don’t do it).
Anyhow, back to our pie. The recipe is actually identical to the pumpkin pie I posted two weeks ago, but here it is again.
1) Bake sweet potato at 400° for approximately 1 hour or until you see the sap coming out. The sap coming out indicates peak sweetness.
2)Add the pre-baked potato to a large bowl with two eggs, a teaspoon or two of vanilla extract, a half cup of milk, a half stick of butter, and cinnamon and nutmeg. I use about 3 tablespoons of cinnamon and a half teaspoon of nutmeg.
3)Use a handheld immersion blender to blend all the ingredients together until achieving a uniform consistency.
4. Place in a baking dish and bake again at 400° for about a half hour. Stick a fork or toothpick in after 15 minutes to check for doneness. If the fork or toothpick comes out clean, it’s done!
5. Of course my lovely husband had to make this extra indulgent by drizzling some raw honey on top for Cub.
Even though Cub averages eating a few pounds of sweet potatoes a week, he went crazy for this pie.
We had some beautiful unseasonably warm days the past few days, so I haven’t been baking this week yet.


(I know that bottom picture looks a little awkward, but I was throwing leaves on Cubby. I’m not sure why any of us spend money on toys, because God is clearly the best toy maker.)
But the projected high temperature for the next 2 days is only in the 40s, so we’ll be warming our house up with both pumpkin and sweet potato pies!
