Hello, tender friends!
We had a delicious and decadent Valentine’s Day dinner. Steak and asparagus are yummy all the time, and especially when grilled. Oh, and that’s homemade horseradish, but more on that next week.

While Valentine’s Day is a good day to indulge, I actually found a way to indulge this Valentine’s Day that is relatively healthy: mocha chia seed pudding.

Please ignore the crayon marks on my table. Or, take a guess who’s responsible for them.

One serving of this has four grams of coconut sugar, so it should still be viewed as an occasional treat, but everything else in it is super healthy, and the dinner beforehand could be keto if you went light on the carrots.
Here are the ingredients:
1/4 cup of chia seeds
1 teaspoon of Health Ranger’s hot cocoa mix (you can use whatever hot cocoa mix you want, but the Health Ranger brand is the lowest sugar and highest quality I’ve found)
5 coffee beans (or to taste, but I used 5)
1 can of coconut milk
Dash of cream to taste (optional, but extra delicious)
Directions:
- Heat about 8 oz of coconut cream up on the stovetop.
- Blend the coffee beans as finely as possible while the coconut milk is heating up.
- Place ground up coffee beans, chia seeds and hot cocoa mix into a jar.
- Once the cream and water of the coconut milk are heated so that they are full combined, pour the coconut milk and dash of cream on top. *Please note that there is sometimes a variation in how much coconut milk you need, but I just make sure the seeds are covered with extra on top since the seeds will absorb liquid. But you can make this pudding thinner or thicker depending on your preference.
- Stir to full blend everything together, then put in the fridge for about an hour to chill.
- Enjoy! Chia is full of protein, fiber and antioxidants, and are a great pre-workout food. The ancient Aztecs fueled up for battle by eating chia seeds because they are so wonderful at sustaining energy.
This was a way to enjoy our Valentine’s Day with a sweet treat at the end without feeling guilty. 🙂
